General food hygiene

Contents:

With the course, you will gain knowledge and skills that enable you to apply principles and legislation in connection with self-control and risk analysis and to contribute to inhibiting microorganisms in connection with the production, storage and sale of food from your own kitchen.

Target group:

The course is aimed at non-skilled workers who have experience with food preparation in institutional kitchens, restaurant kitchens, canteens and catering companies.

Goal:

You gain knowledge that enables you to:

- To describe the occurrence, growth and spread of microorganisms in foods.

- To explain the most common foodborne diseases, their cause and spread, and the connection between outbreaks and production monitoring.

- To explain current legislation regarding the manufacture, storage, heating, keeping warm and cooling phases and sale of food.

- To explain the importance of good personal hygiene and production hygiene when handling food.

- To explain the function of the food regions in supervising and approving businesses and in publishing inspection results.

Based on this knowledge, you will gain proficiency in:

- To apply knowledge about microorganisms in relation to inhibiting their development in the practical work of manufacturing, storing and selling food.

- To apply principles of good personal hygiene and production hygiene.

- To apply the overall principles of self-control in the production, storage and sale of food, including the relevant industry codes.

- To apply the principles of risk analysis, point out critical points and establish systematic monitoring procedures, carry out self-control in a current production.
