Production of desserts and party cakes

Contents:

You can plan, produce and product develop various desserts and party cakes: tiered, wedding and layer cakes. You will also learn to decorate and set up a dessert buffet and window decoration. You will also learn to work with portion calculation, decoration, pricing, quality assessment of raw materials and products.

Target group:

The course is aimed at employees who work professionally in the production of desserts and party cakes.

Goal:

You can:

- Produce and product develop a selection of desserts and party cakes.

- Decorate desserts and apply refrigeration and freezing techniques in relation to shelf life.

- Assess the quality of raw materials and finished desserts and price them.

- Plan and produce a selection of party cakes: wedding, tiered, cheese and layer cakes.

- Calculate portions and mix flavors for party cakes

- Decorate and set up party cakes for receptions, dessert buffets and window decorations.

- Assess the quality of raw materials and products and price them.
