Production of sausages, cold cuts and smoked products Christmas food

Contents:

In the course you will learn how to produce and refine product types within the product group sausages, cold cuts and smoked products. You will work with relevant machines, packaging and labeling, as well as quality calculation and costing of produced goods.

Target group:

Employees (skilled/unskilled) employed in retail processing and refining of fresh produce.

Goal:

Participants can produce and refine product types within the group of cured meats, cold cuts and smoked products and comply with applicable hygiene regulations for both personal hygiene and production hygiene as well as self-control. Participants can assemble and disassemble relevant machines taking into account the working environment and safety. Furthermore, participants can prepare the products in self-selected packaging and carry out checks of statutory labelling as well as calculate quality and make calculations on produced goods using IT-based calculation systems.
