Food for vegetarians and vegans 1

Contents:

With the course, you will gain knowledge and skills that enable you to plan, prepare and serve vegetarian and vegan dishes, based on knowledge of vegetarian diets, with a focus on both sensory and nutritional standards.

Target group:

The course is aimed at non-skilled workers who will work with - or who want to work with - the production of vegetarian and vegan food with a focus on sensory and nutritional quality.

Goal:

You will gain knowledge that enables you to:

- To describe vegetarian and vegan diets.

- To plan meals for vegetarians and vegans that meet the recommendations for a normal diet.

- To describe the sensory principles.

Based on this knowledge, you will gain proficiency in:

- To produce food for vegetarians and vegans that meets the recommendations for a normal diet

- To prepare fruits, vegetables and legumes so that they complement each other sensory and nutritionally.

- To prepare and present vegetarian and vegan dishes.

This course is taught by either Line Udengaard Christensen or Jørgen Kure Rasmussen.
