Contents:

With the course you will gain new knowledge and skills that will enable you to make plant-based open sandwiches based on vegetables, herbs, legumes, grains, seeds and nuts. You will learn to further develop traditional open sandwiches with innovative and climate-friendly use of plant-based ingredients, without compromising on taste, satiety and nutrition.

Target group:

The course is aimed at skilled/food professionals who have experience with professional food preparation in kitchens, restaurants, canteens and institutions. The course is targeted at employees who want inspiration and skills in working professionally with food preparation, which is predominantly plant-based.

Goal:

You gain knowledge that enables you to:

- To explain methods for producing tasty plant-based sandwiches with fewer or no animal products, including sensory success factors

- To explain how plant-based sandwiches can be both climate-friendly and nutritionally adequate

- To explain how plant-based open sandwiches can be composed and produced innovatively based on traditional techniques and methods

You will gain skills in:

- To produce plant-based spreads, creams, garnishes and components from seasonal vegetables, herbs, legumes, seeds and nuts

- To produce visually delicate green open sandwiches with a focus on taste, satiety and texture that is nutritionally adequate.
