Contents:

With the course, you will gain knowledge and skills that will enable you to develop new types of open sandwiches based on the classic open sandwiches and with innovative decorations and garnishes.

Target group:

The course is aimed at professional gastronomes who want more knowledge and experience in innovating the classic open sandwich. If you are not a professional, it is recommended that you first take the course 20840 Open Sandwich Workshop, to learn about the classic open sandwich in the kitchen. Goal:

You gain knowledge that enables you to:

- To explain the sensory principles in the development of new types of sandwiches

- To explain methods for reducing the amount of food waste by optimally utilizing the raw materials used

Based on this knowledge, you will gain proficiency in:

- To produce innovative decorations and garnishes for open sandwiches.

- Using cooking methods and seasonal ingredients in an innovative way

- To develop new types of open sandwiches based on the classic open sandwiches.

- To work according to current regulations for food hygiene and self-control in relation to the goal.
