Plant-based food

Contents:

The course will equip you with new knowledge and skills to plan and prepare plant-based meals using vegetables, potatoes, grains, seeds and nuts in combination with animal products. You will learn how to prepare plant-based food based on seasonal ingredients that is tasty, nutritionally complete and climate-friendly.

Target group:

The course is aimed at skilled/food professionals who have experience with professional food preparation in kitchens, restaurants, canteens and institutions. The course is targeted at employees who want inspiration and skills in working professionally with food preparation, which is predominantly plant-based.

Goal:

You gain knowledge that enables you to:

- To describe what "plant-based food" is and how plant-based meals can be composed

- Explaining how plant-based food can be both climate-friendly and nutritionally adequate

- To explain sensory success factors when preparing tasty plant-based food

You will gain skills in:

- To plan and compose a plant-based meal that focuses on taste, satiety, nutrition and texture, taking into account the needs and expectations of specific target groups

- To prepare plant-rich meals based on legumes, vegetables, potatoes, cereals, seeds and nuts alone and in combination with animal products

- Creating umami, savory flavor and texture in plant-based cuisine using different cooking methods and flavorings
